I went to a cooking class to learn how to make churros with chocolate chilli sauce. Here’s the recipe. I challenge my friends to give this a go! Tell me if you failed miserably in the comments below (hahahaha!)
Milk Chocolate Ganache Recipe
INGREDIENTS:
100 g of milk
100 g of dark chocolate (70% cocoa)
Chile Árbol
INSTRUCTIONS:
Fried the chile with a pinch of vegetable oil and place the milk and chocolate in a pot or saucepan, cook over low heat and stir constantly until the chocolate is mixed and melted with the milk. Then place in a bowl and let stand at room temperature.
Churro Recipe
INGREDIENTS:
40 g of Butter
150 g of Hot Water
55 g of Sugar
245 g of regular Flour
1 Egg
12 mL Vanilla
A pinch of salt
2-4 Tbsp of sugar
1-2 tsp of cinnamon
INSTRUCTIONS:
In a bowl, place the butter and melt it with hot water, when it is completely melted, immediately add the sugar with the flour and mix until lumps are no longer evident. Then, add the egg and mix until it is fully integrated into the dough. Beat with a fork, by stretching the dough out. This activates the gluten and helps in fluff up when you fry it.
Put the dough into a piping bag. Twist the bag tightly, and hold with your left hand. Use your right hand to squeeze the mixture out of the bag.
Mix the sugar and cinnamon together in a plate.
Place vegetable oil in a pot and bring the heat up to a temperature between 180 and 200° C. Make a test with the hot oil to check that the dough floats immediately and expands during the cooking process.
Pipe the dough into the hot oil. Keep the piping bag close to the oil to ensure that your churro is nice and fat. Make whatever shape you like – a circle, a spiral or if you are a legend a flower.
Once the churro has cooked on one side for about 30 seconds to one minute, carefully pick it up with tongs and flip it over. Cook for another 15 seconds.
Pick up your churro with tongs and let any oil drip into the pot then put it on a paper towel. Then put it in your cinnamon sugar and shake to coat.
Dip in chocolate sauce and enjoy!
